NOVEMBER

November. The first púcaras spotted, picked and eaten. The púcara or parasol mushroom cannot be overlooked. It stands on a long stem and the hat is about 25 cm big. After the first rain in autumn it comes out of the ground in places where it has stood before. The ring around the stem is loose, so it is easy to recognise.
They are also tasty: put them through a beaten egg and the breadcrumbs and fry them like a schnitzel. One per person is enough.
